Colourful Miniature Rasgullas

Ingredients to make Colourful Miniature Rasgullas

  • Milk 1 litre
  • curd 1/2 cup
  • Iced cold water 1 litre
  • sugar 1 cup
  • water 2 cups
  • Cardamon 3 pods crushed
  • Food colours as per your choice

How to make Colourful Miniature Rasgullas

  1. In a pan bring the milk to a boil. Once it starts boiling pour the yogurt on it.
  2. Let the milk curdle which will take 2-3 mins. Turn off the heat and leave it for 2 mins.
  3. Now add the chilled water to the curdled milk. Leave it aside for 2 to 3 minutes.
  4. Filter and collect the cheese in a cheese cloth or muslin cloth. Let the water drain completely by squeezing it nicely.
  5. Now knead the cheese well to make into a smooth dough. Divide the dough as per the no of colour to be used.
  6. Add the food colours and knead for few mins.
  7. Take small portions of it and roll to tiny balls or desired shapes. They should be tiny and not big as it will double when boiling in sugar syrup.
  8. Add sugar and water to a wide pan and bring to a boil. To the boiling sugar syrup, add cardamom powder.
  9. Now add the balls one after the other gently.
  10. Cover the pan with a lid and cook for 10 mins on a medium high flame.
  11. Gently stir every 2-3 minutes to ensure even cooking and puffing. They will double in size when done.

My Tip:

You can use 2 tsp lemon juice or vinegar, but with yogurt they smell and taste perfect.
