Kaala Jamun

Ingredients to make Kaala Jamun

  • Khoya 2 cups
  • Paneer (cottage cheese) 1 cup
  • Maida (all purpose flour) 1/2 cup
  • semolina (suji) 1 tbsp
  • sugar 1/2kg
  • Cardomon (elachi) 10 to12
  • baking soda 1/4 tsp
  • cashew nuts 6 to 7 (chopped)
  • Red food colour 1 pinch
  • water 250 ml
  • ghee for frying

How to make Kaala Jamun

  1. Mix cottage cheese, semolina, baking soda,2 tsp powdered sugar ,1/2tsp cardomon powder, khoya and flour .Make a soft dough with the help of your palms. keep aside
  2. Make stuffing for the jamuns. Crush the cashew nuts,mix a little sugar powder ,food color ,elachi powder and a small amount of the jamun dough. mix all together.
  3. In a pot boil sugar ,water and add elchi powder. Boil until you get a sticky feeling between your fingers when you u touch the syrup
  4. Divide the dough into equal portions and take one portion .Make a dent and fill a small portion of the filling and close it and give a round shape .Proceed to make all the balls.
  5. In heavy bottom pan heat ghee ,fry the jamuns in medium to low heat constantly stirring the jala jamuns untill you get a black colour. Fry all the kala jamuns in batches.
  6. Dip the kala jamuns in the sugar syrup for about 1/2 hour to get soft juicy kala jamuns. Serve warm or chilled as per your liking.

My Tip:

While deep frying the jamuns, constantly stir the ghee, so that the jamuns cook evenly and get the colour all the sides. Always dip in the fried kaala jamuns in the warm sugar syrup.
