Ingredients Serving: 4

  1. Zucchini -3-4
  2. Red cabbage 1-2 cups
  3. Carrot grated 1 cup
  4. Different coloured bell peppers 1-2 cups
  5. Sweet corn 1cup
  6. Baby spinach 1/2 bunch
  7. Green onions thinly sliced 1cup
  8. Cilantro 1/2 bunch sliced
  9. Apple 1cup
  10. Lemon juice
  11. Onion thinly sliced 1 cup
  12. Extra -Virgin olive oil 1-2 tbspn
  13. Salt 1/2 tbspn
  14. Black pepper 1/2 tbspn
  15. Balsamic or rice vinegar 1tbspn
  16. Maple syrup 1/2 tbspn
  17. Garlic minced 1 tbspn
  18. Sesame oil 1 tbspn
  19. Red chill flakes 1 tbspn

Instructions

  1. Cut zucchini spirally with the help of a spiral ,red cabbage thinly and so do the bell peppers.
  2. In a bowl whisk together balsamic vinegar, maple syrup, extra-virgin olive oil, salt ,pepper, garlic, sesame oil and red chilli flakes.
  3. Mix it with the vegetables and apple till its fully coated.
  4. Cover and let it sit in the refrigerator for at least 30mints to serve cold .or you can consume immediately.
