Khoya Gulab Jamun

Ingredients to make Khoya Gulab Jamun

  • Khoya /Hariyali mawa 250 grams
  • maida/Flour 5 tablespoon
  • Milk powder 5 tablespoon
  • Arrowroot powder 2 tablespoon
  • baking soda 1/4 teaspoon
  • sugar 2 cups
  • water 2 cups
  • Green cardamom crushed 1/2 teaspoon
  • Few saffron strands
  • ghee or vanaspati or oil as required for frying

How to make Khoya Gulab Jamun

  1. In a bowl or a large plate take mava ,milk powder baking soda ,arrowroot powder ,milk powder and flour and mix well
  2. Only if needed add 1-2 tablespoon milk and knead to a soft smooth dough .
  3. Divide into small balls and keep aside covering the balls with a muslin cloth .
  4. Heat a kadhai /pan with ghee vanaspati or oil and fry the Gulab Jamun over medium flame until golden brown .
  5. Make a sugar syrup by boiling the sugar water and cardamom .
  6. Add a teaspoon of milk to remove scum if any ,let it boil for 10-12 minutes .
  7. Place the Gulab Jamun in the warm sugar syrup and let it soak for 1 to 2 hours

My Tip:

Kneading is very important knead tye Mawa with the heels of your palm for few minutes till the dough is smooth . If the Mawa is good you may not need to add any milk while you need if at all the dough seems dry add 1-2 tbsp milk and knead till you get soft dough . The ghee or oil should not be smoking hot once hot switch the flame to medium . If you can't find arrowroot powder add 1 tablespoon cornflour and one more tablespoon of milk powder .
