ABOUT Cauliflower and Red quinoa salad RECIPE

This fab salad is a protein - fest and as satisfying as an entree.

Ingredients Serving: 4

  1. 1 cup red quinoa grain
  2. 1 cup chopped cauliflower into very small florets
  3. I large cucumber chopped into small pieces
  4. I chopped tomato
  5. 1/4 cup finely chopped scallions
  6. 1/2 cup red onions
  7. 1 1/2 tbspns olive oil ( EVOO is better )
  8. Juice of 2 small limes
  9. Salt to taste
  10. freshly ground black pepper
  11. 4-5 stalks along with cilantro leaves finely chopped


  1. Important : Wash the quinoa grain before cooking
  2. To cook quinoa, bring 2 1/2 cups water to a rolling boil and add the quinoa grain.
  3. Simmer uncovered for 12-15 minutes until water is absorbed. Fluff it up with a fork and set aside to cool.
  4. Prepare the salad by combining the cauliflower, cucumber, tomatoes , scallions and onions in a large bowl.
  5. Add the cooled quinoa to the salad.
  6. In a separate small bowl mix the olive oil , lime juice and a dash of salt.
  7. Drizzle the dressing over quinoa salad and toss gently.
  8. Garnish with cilantro and top off with black pepper.
