Eggless Fruit Cake

Ingredients to make Eggless Fruit Cake

  • maida/Flour 1 cup
  • Milk 1/4 cup
  • Thick curd 1/2 cup
  • honey 1 tsp
  • Baking powder 1/2 tsp
  • baking soda 1/4 tsp
  • White butter 1/2 cup
  • Kishmish 1/2 cup
  • Red cherries or tuti frooti 3/4 cup
  • sugar 1/2 cup
  • Chopped almonds 2-3 tbsp
  • oil to grease

How to make Eggless Fruit Cake

  1. Preheat the oven on convection mode at 180 degrees celsius.
  2. Sieve the maida, baking soda and baking powder.
  3. Now whisk the sugar and white butter well. Add in the honey and curd, mix it well.
  4. Now add in the remaining ingredients and mix this batter till it becomes smooth, without any lumps.
  5. Grease a tray with oil and put this batter in a tray. Microwave it at 180 degrees celsius for 30 minutes.
  6. Let it cool for 10 minutes. Then serve it with tea or coffee.

My Tip:

Instead of tuti frooti, you can add red cherries. If you are using tuti frooti, you can add tri coloured ones, this will give it a good colour combination.
