ABOUT Cream of Asparagus RECIPE

A thick and cream soup made from asparagus cooked with vegetable stock.

Ingredients Serving: 4

  1. 1 kg Asparagus
  2. 6 cups of Vegetable stock
  3. 1/2 cup Cream
  4. 1 Onion chopped
  5. 3 tbsp Butter
  6. A few drops of lemon juice.


  1. Trim the asparagus and cut into halves about 1/2 inch pieces.
  2. Heat butter in a pot, add onions and cook until onions become soft and translucent.
  3. Add asparagus with a pinch of salt. Stir fry for 5 mins.
  4. Add the 4 cups vegetable stock. Cover and cook for 15-20 mins.
  5. Remove from heat and gradually process in a blender to make a smooth puree.
  6. Return the puree into the pot and add the cream and remaining vegetable stock. Blend well and cook for 2 mins.
  7. Add lemon juice and remove from heat.
  8. Transfer to serving bowl. Garnish with asparagus pieces and butter.
