Banana Chocolate Muffins (Eggless)

Ingredients to make Banana Chocolate Muffins (Eggless)

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 3/4 cup unrefined cane sugar powdered (or white sugar)
  • 1/3 cup unsweetened cocoa
  • 2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk (room temperature)
  • 1 cup mashed bananas
  • 1/3 cup olive oil (any any other vegetable oil)
  • 2 tablespoons honey
  • 1 teaspoon vanilla essence

How to make Banana Chocolate Muffins (Eggless)

  1. Preheat the oven to 180 degrees celsius. Grease one 12 cup muffin pan with butter.
  2. Whisk together the first seven ingredients (dry ingredients) in a large bowl.
  3. In another large bowl, take 1/2 cup of milk, honey and vanilla essence. Mix it well together.
  4. Next add the mashed bananas and mix it well. Add oil and mix till you a get a mixture of uniform texture.
  5. Now add the dry ingredients in three shifts, mixing gently after each addition. (If the batter feels thick, pour in more milk.)
  6. Fill up the muffin pan leaving 1/4 space.
  7. Bake for 25 minutes or till a toothpick inserted into the center comes out clean.
  8. Remove from the mould after 10 minutes. Let it cool in the rack.

My Tip:

Add a teaspoon of cinnamon for a different flavour or throw in 1/4 cup of chocolate chips for double chocolate banana muffins. Do not over mix the batter, the muffins will come out hard.
