ABOUT Burmese Khow Suey RECIPE

This is a traditional Burmese one pot dish made with noodles and a curry with coconut milk.

Ingredients Serving: 4

  1. Noodles - 2 cups (cooked al dente)
  2. Mixed vegetables - 1 cup (carrot, bell peppers, green peas thinly sliced)
  3. Onion - 1 no, sliced
  4. Coconut Milk -1 cup
  5. Vegetable stock - 1 cup
  6. Gram flour / Chickpea flour - 2 tbsp
  7. Ginger and garlic paste - 1 tsp
  8. Red chilli powder - 1/2 tsp
  9. Turmeric powder - 1/2 tsp
  10. Salt as required
  11. Oil - 1 tbsp
  12. Boiled eggs - 4 nos
  13. Deep fried noodles- 1/2 cup
  14. Deep fried onion slices - 1/2 cup
  15. Deep fried garlic slices- 2 tbsp
  16. Red chilli flakes- 1 tsp
  17. Roasted peanuts - 2 tbsp, crushed
  18. Fresh green chillies - 1 tsp, chopped
  19. Fresh coriander - 2 tbsp, chopped
  20. Lemon slices- 2 nos

Instructions

  1. Heat oil in a pan, saute the onion, ginger-garlic paste and saute for a minute, then add in the vegetables and cook until they start wilting.
  2. Add in the chickpea flour and saute, then add in the vegetable stock and simmer for 4 minutes.
  3. Bring it to a low heat, add in the coconut milk, chilli powder, turmeric powder, salt and bring it to a gentle boil. Then turn off the heat.
  4. This gravy has to be neither thick or thin. So adjust the coconut milk as per need. If the vegetable stock has salt, reduce the salt in the gravy as per need.
  5. In a bowl, add in the required amount of noodles, gravy, then add in the fried onions, garlic, green chillies, coriander, fried noodles, boiled eggs, crushed peanuts and end it with red chilli flakes, then place lemon slices on the bowl.
