Ingredients Serving: 4

  1. Basmati rice - 1 big cup ( cooked & kept aside )
  2. Paneer - 200 gms cut into small cubes
  3. Onion - 2 cut fine
  4. Tomato - 1 chopped small
  5. Ginger - half inch piece finely chopped
  6. Green chilly - 1 finely chopped
  7. Garlic- 1 big pod finely chopped
  8. Capsicum - 1 small cut into small pieces
  9. Sweet corn - 1 / 4 th cup
  10. Carrot - 1 chopped small
  11. Mexican seasoning - abt 2 tspn (adjust to taste )
  12. Tomato ketchup - 1 tbspn
  13. Pepper powder- half tspn
  14. Turmeric pwdr - 1 / 4 tsp
  15. Salt to taste
  16. Butter - 1 tbspn
  17. Oil - 2 tspn
  18. Coriander leaves for garnish

Instructions

  1. Take a big kadai or pan. Heat it.
  2. Put butter and oil
  3. Then add chopped onions saute well for 2 minutes
  4. Add chopped ginger, green chilly and garlic.
  5. Cook till raw smell goes
  6. Then add the dry masalas
  7. Add chopped tomato, ketchup and vegetables and Saute well
  8. Now add the paneer cubes. Put salt
  9. When cooked, add the rice and gently mix all ingredients till it gets coated well.
  10. Garnish with coriander leaves
  11. Serve hot with ketchup or raita
