ABOUT Khichdi Fried Rice RECIPE

My innovative take on the ever famous rice dish. It can be made with leftover khichdi as i did or you may also prepare khichdi especially for this recipe. It is a one pot meal for the kids and the adults alike and makes it an ideal one for tiffin box.

Ingredients Serving: 4

  1. Leftover khichdi 2 to 3 cups
  2. Fresh veggies of your choice diced about 1 1/2 cups.
  3. Butter or ghee 2 tbsp
  4. Salt to taste
  5. Chilli flakes 1 tbsp
  6. Green chillies finely chopped 1 tbsp
  7. Coriander for garnishing.
  8. Pavbhaji masala a tbsp or garam masala 1 tsp
  9. Garlic mince 1 tbsp
  10. Spring onions a small bunch
  11. Caraway seeds a tsp

Instructions

  1. Heat butter or ghee in a non stick deep fry pan.
  2. Saute the veggies with all the masalas
  3. After about 10 mins of stir frying, add khichdi and cook over low flame for 5 - 10 minutes
  4. Serve hot with any raita of your choice. I served it with dry curd chillies.
