Khichdi Fried Rice

Ingredients to make Khichdi Fried Rice

  • Leftover khichdi 2 to 3 cups
  • Fresh veggies of your choice diced about 1 1/2 cups.
  • butter or ghee 2 tbsp
  • salt to taste
  • chilli flakes 1 tbsp
  • Green chillies finely chopped 1 tbsp
  • coriander for garnishing.
  • Pavbhaji masala a tbsp or garam masala 1 tsp
  • garlic mince 1 tbsp
  • spring onions a small bunch
  • caraway seeds a tsp

How to make Khichdi Fried Rice

  1. Heat butter or ghee in a non stick deep fry pan.
  2. Saute the veggies with all the masalas
  3. After about 10 mins of stir frying, add khichdi and cook over low flame for 5 - 10 minutes
  4. Serve hot with any raita of your choice. I served it with dry curd chillies.

My Tip:

Can use any veggies. I used carrots, capsicum, french beans and green peas. If you have leftover khichdi, no preparation time needed at all. Given a slight desi tadka with pavbhaji masala, however it is optional. But i bet you will love this fried rice with pavbhaji masala.
