Ingredients to make Ulundhu Vadai

  • urad dal whole - 1 Cup
  • curry leaves - handful
  • salt to taste
  • green chillies - 2
  • oil - for deep frying

How to make Ulundhu Vadai

  1. Wash the dal thoroughly. Soak in water for 30 minutes.
  2. In a mortar, grind the dal with just 5 tbsp water and add water gradually. The batter should not get very runny. The batter should ground finely.
  3. Check the salt, add curry leaves and chopped green chillies.
  4. Heat oil to maximum temperature, and add small portions of the batter and deep fry them until they get golden brown.

My Tip:

To get the tiny holes in the vadas, dip your fingertips in water, take a small portion of batter, and make a hole with thumb or finger and fry. Take care of your hand while placing into the hot oil. Can refrigerate the batter for 20 minutes before frying. This will yield very crisp vadas.
