Ingredients to make Crispy ulundha vada..

  • Urad dhal(ulundhu) 200 gms
  • Chopped small onions 1 cup
  • Chopped corriander
  • Chopped chilly
  • Chopped curry leaves
  • pepper slightly crushed 1 spoon
  • jeera 1 spoon
  • salt to taste
  • oil

How to make Crispy ulundha vada..

  1. Use only whole unskinned urad dhal..(முழு உளுந்து..தோல் நீக்கியது)Secret starts....Soak urad dhal whole night or to a minimum of 8 hours in the refrigerator. :100:.clean dhal before soaking
  2. Drain the water in a bowl.grind the dhal with very less water.grind until smooth thick paste..use only the drained cold water if needed..
  3. Transfer the batter into a bowl.keep aside.let it set to minimum 30 minutes to maximum one hour.
  4. After an hour add all the ingridients and add salt to the batter.gently mix.do not add water.
  5. Heat a deep bottom kadai with Oil for deep frying vada.let the oil heat.
  6. Experts make vada as usual.begginers follow the next step
  7. Slightly water your hands..take a small amount of batter..place on ur left hand or on a butter paper..slightly tap it..then dip ur right hand index finger in water make a hole now in the centre..tilt upside down to ur right hand...gently slide it in to the oil carefully
  8. Simmer the flame.flip it.let it cook well.take out once the bubbles stops popping.dont wait untill brown.
  9. Place it on a paper towel for few seconds.now serve with traditional south indian coconut chutney.

My Tip:

Note:drop a small piece of tamarind into the oil..which lessen the oil absorbtion in vada.
