ABOUT Mix Vegetable Pakora RECIPE

Vegetable Pakora recipe is an easy to make Indian starter prepared with mixed vegetables, chickpea flour and carom seeds. Goes as evening snacks.

Ingredients Serving: 6

  1. Eggplant 2
  2. Carrot 1
  3. Onions 2
  4. Bell pepper 1
  5. Potato 2
  6. Kasoori methi 1 Teaspoons
  7. Oil for deep-fry
  8. Salt to taste.
  9. Chickpea flour 1 Cup.
  10. Ajwain (carom seeds) 1 tsp
  11. Fennel Seeds 1 tsp
  12. Coriander seeds 1 tsp.
  13. Spinach 1 Bunch.
  14. Methi leaves 1 Bunch.
  15. Spring onions 1/2 cup
  16. Chopped Coriander 1 bunch
  17. Chilly Powder 1tsp
  18. Paneer 1/4 Cup.
  19. Baking soda 1/4 tsp

Instructions

  1. Cut all the vegetables in to Julienne, and keep aside.
  2. Take some coriander seeds, fennel seeds; make a coarse powder in mortar pestle.
  3. Take a bowl add powder of coriander and fennel seeds, add ajwain, chickpea flour, salt, oil, kasoori methi and mix them till sandy texture ,
  4. add potato juliennes, bell pepper, carrot, eggplant, spinach, methi leaves(optional), spring onions, paneer, onions, chopped coriander, chilly powder, baking soda and rest for 5 minutes, and sprinkle some water and make a dough.
  5. Heat oil in a pan and deep-fry the pakora, Serve this hot with chutney.
