ABOUT Potato Encrusted Breakfast Pizza with Egg & Yam RECIPE

This breakfast is very unique where I have made use of potatoes as base instead of pizza dough base. American diner breakfast usually will have batter pancakes with sides like eggs, hashbrowns, and sausages. There is an option of having fries on the side too, but I have substituted those with yam which is a healthy option.

Ingredients Serving: 4

  1. 4 Eggs
  2. 4 turkey bacon pieces
  3. 1/3 cup Mexican hot salsa
  4. 1 small purple yam diced
  5. Cheddar cheese as needed
  6. Salt and pepper to taste
  7. Olive oil as needed
  8. For potato pancake
  9. 2 cups shredded potatoes
  10. 3 tbsp plain flour
  11. 1 egg
  12. 2 tbsp Garlic flavored Parmesan cheese sprinkles
  13. Salt and pepper to taste
  14. Butter/oil as needed

Instructions

  1. Squeeze out any excess water from shredded (grated) potatoes. Combine them with rest of the ingredients mentioned under pancake except butter/oil.
  2. Make 4 equal sections of the mixture. Heat a nonstick pan with butter or oil. Take one section, flatten it to spread in size and place in the heated oil. Try to keep the mixture as thin as possible.
  3. Fry both sides till crisp. Remove to a plate and repeat the process with the remaining sections.
  4. Season the yam with salt and pepper. In another nonstick pan, stir fry yam till crispy on all sides. Set them aside.
  5. Meanwhile, preheat oven to 350 Deg F and heat oil in another large nonstick pan/skillet. Fry the bacon pieces on both sides till crispy.
  6. In the same pan, break eggs and cook them till set. Flip them and cook for 30 seconds.
  7. Line a baking tray with oven proof parchment paper. Arrange the pancake on the tray. Spread the salsa over the pancake and sprinkle cheese. Bake in the oven till cheese just melts (approximately 8-10 minutes).
  8. Repeat process if they all do not fit in the tray. Remove pancakes from the oven to a serving plate.
  9. Top the pancake with fried egg. Season eggs with salt and pepper to taste. Serve the yam pieces on the side along with the bacon pieces.
