The special traditional masala, the flavour of the banana leaf, the smokey flavour of the charred coal, makes the fried fish tangy, delecious and irresistable.

Ingredients Serving: 3

  1. Pieces of fish 3 ( of any kind )
  2. Turmeric 1 teaspoon
  3. Salt ( as per taste )
  4. Coconut oil 3 tablespoons
  5. Curry leaves 1 sprig
  6. Mustard 1 teaspoon
  7. Ginger 1 inch piece ( grated fine)
  8. Garlic cloves 5 ( finely chopped )
  9. Onion 2 medium ( finely chopped )
  10. Tomato 1 medium ( finely chopped )
  11. 1 green chilli ( finely chopped )
  12. Turmeric 1/2 teaspoon
  13. Red chilli powder 1 teaspoon
  14. Coriander powder 1 teaspoon
  15. Salt ( as per taste )
  16. Sugar 1/2 teaspoon
  17. Vinegar 1 tablespoon
  18. Banana leaves 3 pieces
  19. Few pieces of charred coal
  20. Cotton pieces of thread

Instructions

  1. Clean and wash the fish well.
  2. Marinade the fish in salt and turmeric for half an hour.
  3. Take a flat bottomed frying pan and add one tablespoon of coconut oil.
  4. When the oil heats up add mustard seeds.
  5. When the mustard seeds splutter add the curry leaves .
  6. Add the ginger - garlic and fry until the raw smell disappears.
  7. Add the onion with 1/2 teaspoon of salt and fry till translucent.
  8. Add the tomatoes and fry till nice and mushy.
  9. Add the turmeric, red chilli powder and the coriander powder with a tablespoon of water.
  10. Add salt as per taste.
  11. Add the vinegar.
  12. Fry the masala for a minute and keep it aside.
  13. Now take the banana leaves one at a time and place each one on the direct flame just to soften the leaves to help in wrapping up the fish easily
  14. After the leaves soften, on each leaf first put some of the special fried masala, then place the fish over the masala and again put some more masala all over the fish.
  15. Wrap each fish well with the banana leaf and tie them up with a cotton thread.
  16. Let the fish sit in the masala and banana leaf for 15 minutes till the masala seeps in them.
  17. Heat up a frying pan well pour in some coconut oil.
  18. Heat the coconut oil well too and place the wrapped up fish one beside the other.
  19. Place a few charred pieces of coal on the fish to get the smokey flavour.
  20. Cover the pan with a lid.
  21. Fry the fish for five minutes.
  22. Open the pan and flip the fish over to the other side, place the charred coal on the fish and cover the pan up with the lid again for another five minutes.
  23. After five minutes take out the fish from the pan on to a plate.
  24. The traditional fried fish in banana leaf with smokey flavour is ready to be eaten.
