ABOUT Quiche In a Brick Pot RECIPE

It is a rustic Italian quiche made with eggs, spinach, cheese, onions, garlic and cream.

Ingredients Serving: 4

  1. For crust -2 eggs
  2. 1tbsp Butter
  3. 1tbsp extra virgin olive oil
  4. 2 cups All purpose flour
  5. Pinch of salt
  6. For filling -garlic chopped 1tbsp
  7. Onions chopped 1cup
  8. Spinach chopped 3cups
  9. Eggs 2
  10. heavy cream 1cup
  11. Mozarella cheese diced into small cubes 1/2cup
  12. Black pepper 1/2 tsp
  13. Salt to taste

Instructions

  1. Add butter to flour, add eggs and salt and knead a smooth dough.
  2. Keep this dough covered in the fridge for 10 minutes.
  3. Heat the oil in a skillet and saute onions ,garlic till they become little transparent.
  4. Add spinach, salt and cook for 5 minutes.
  5. While your spinach is getting cooked roll the dough to make large chapati.
  6. Now set the rolled chapati on the brick pot like I did in the picture
  7. Make impressions on the edges of the pot with the help of a fork.
  8. Grease the crust with olive oil.
  9. Add cooked spinach , onions and garlic.
  10. For the custard filling we need to whisk the the eggs with cream and salt.
  11. Pour the beaten cream mixture over spinach filling.
  12. Sprinkle cheese and pepper on top.
  13. Bake quiche at 180 degrees C for 20 minutes.
  14. Cool for at least 20 minutes.
  15. Serve and enjoy
