An eggless Chocolate Cake with layers soaked in Cranberry juice with chocolate mousse filling and covered with Chocolate Ganache

Ingredients Serving: 6

  1. Cocoa powder 1/2 cup
  2. Maida 1.5 cup
  3. Sugar 3/4 cup
  4. Baking soda 1 1/4 tsp
  5. Salt 1/2 tsp
  6. Milk 1 cup
  7. Oil 1/2 cup
  8. Vanilla essence 1 tsp
  9. Vinegar 2 tsp
  10. Walnuts 1/2 cup
  11. Cranberry juice 2 cups
  12. Chocolate ganache
  13. Amul cream 250 gms
  14. Dark chocolate 500 gms (chopped)
  15. Chocolate Mousse
  16. Chocolate Ganache 1 cup
  17. Fresh whipping cream 2 cup
  18. Fondant for decoration


  1. Heat oven at 180 °C
  2. Sieve all the dry ingredients together
  3. Mix vinegar with milk and let it stand for 5 minutes. Mix in oil and stir.
  4. Mix liquid ingredients with the dry ingredients and whip for 20 seconds till there are no lumps left. Do not over mix.
  5. Bake for 30-35 minutes till a toothpick inserted comes out clean. Then take it out and let it cool.
  6. To prepare the chocolate ganache, heat cream in a pan, add in the chopped chocolate. Mix well and keep aside.
  7. To prepare the chocolate mousse, whip the fresh cream well. Once it doubles, add in the chocolate ganache. Your mousse is ready immediately.
  8. Cut the cake into half. Soak the layers in cranberry juice.
  9. Spread the layers with ganache and then the chocolate mousse. Cover the cake with mousse and then with the ganache.
  10. Decorate with ganache so that the fondant sticks properly.
  11. Cover with fondant. Your cute Owl is ready for Christmas.
