Fruit Cake

Ingredients to make Fruit Cake

  • 1 cup whole wheat flour
  • 1 egg
  • 1 cup brown sugar
  • 3 tsp Cocopower
  • 1/2 tsp cardamom powder
  • 4 tsp Fruit juice
  • 3 tsp honey
  • 1 tsp vanilla essence
  • 1/2 tsp cinnamon powder
  • 3/4 cup Sunflower oil
  • 1 tsp Baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup dried cranberries
  • 1/4 cup dried cherries
  • 1/4 cup dried raisin
  • 1/4 cups chopped pistachios

How to make Fruit Cake

  1. Mix the dried fruits in a large bowl. Add a fruit juice and honey, Mix it all together and wrap the bowl. Leave it to soak for around 5-6 hours.
  2. Preheat the oven to 180 degrees C for 10 min.
  3. Take a large bowl add egg and brown sugar mix well till you see bubbles on the top ( which may take 5 to 8 minutes)
  4. Now add oil , vanilla essence and mix well.
  5. Sieve plain flour, cocoa powder, baking powder, baking soda, cinnamon powder, cardamom powder.
  6. Blend till the batter is combined.Now take the soaked dry fruits squeezed little and add to the batter gently mix.
  7. Keep your loaf tin ready which is greased with a little oil so that it won't stick further, transfer the cake batter into the cake mould. Pat the tray twice to remove the air incorporated into the batter.
  8. Bake at 180 degree celsius for 35 -45 minutes.Check after 30 min as each oven is different
  9. Insert a took pick and check - let it rest for 15 min then serve the Christmas fruit cake. Can store in airtight container for 1 week . ( I have drizzled some chocolate syrup on top of the cake )
