Rum Fruit Cake

Ingredients to make Rum Fruit Cake

  • 2cups flour
  • 3/4 cup mixed peel chopped
  • 1 1/2 cup Mixed dried fruit
  • 1cup water
  • 1tbsp molasses
  • 150gms butter
  • 1/2tsp baking powder
  • 1 tsp baking soda
  • 1tsp cinnamon powder
  • 1cup sugar
  • 1/2 cup rum

How to make Rum Fruit Cake

  1. Soak the dry fruits in the rum and keep aside for 2 hours.
  2. Give one boil to sugar, water and butter.
  3. Put molasses, cinnamon powder, mix peel and leave it to cool down.
  4. Seive the dry ingredients together three times. This step is a must as it will remove all impurities, infuse air and mix all dry ingredients well.
  5. After the liquid mixture is at room temperature add all other ingredients.
  6. Mix well.
  7. Bake it at 200 degrees C for 5 minutes and then on 170 Cfor 20 minutes or till done.
  8. Insert a skewer in the center, if it comes out clean the cake is done. Remove from oven.
  9. Remove from tin over a wire rack and let it cool.
  10. Decorate it with icing sugar and serve.

My Tip:

The more time you soak the dry fruits the better it tastes. The authentic cake has the dry fruits aged in rum for at least a month. The dry fruits used in the above recipe are walnuts, almonds, black raisins and cashew nuts.
