Eggless Rum Cake

Ingredients to make Eggless Rum Cake

  • Rum/Orange juice/black grapes juice 1cup
  • Dry Fruits (Plum, Raisin, Dates, cashew, Almond, Cherry)
  • all purpose flour 1 1/4 cup
  • Whole wheat flour 3/4 cup
  • Baking powder 1 teaspoon
  • baking soda 1 teaspoon
  • nutmeg Powder 1/4 teaspoon
  • Green cardamom powder 1/2 teaspoon
  • cinnamon Powder 1/8 teaspoon
  • Brown sugar 1 1/5 cup
  • Soy milk/ normal milk 1 1/4
  • Oil/butter 1 cup
  • vinegar 2 tablespoon
  • Some cherry for topping

How to make Eggless Rum Cake

  1. Chop all dry fruits.
  2. Soak all chopped dry fruits in Rum/juice for 24 hours.
  3. If you are soaking dry fruits in juice. Then keep it in the fridge.
  4. Sieve all purpose flour, whole wheat flour, baking powder, nutmeg powder, cinnamon powder and cardamom powder.
  5. Mix all sieved dry ingredients properly.
  6. Add brown sugar and oil in dry ingredients. Mix properly.
  7. Take out dry fruits from Rum/Juice.
  8. Add these soaked dry fruits in cake mixture.
  9. Mix this mixture properly.
  10. Now take milk. Add vinegar and baking soda in it.
  11. Mix it. It will be curdle and rise too.
  12. Mix this milk in cake mixture. Mix properly.
  13. Preheat the oven in 180 degrees C
  14. Grease baking tin and dust from flour.
  15. Pour cake mixture in baking tin.
  16. Chop cherry in to 2 pieces. Dust with flour.
  17. Keep these cherries on top of cake mixture.
  18. Bake for 45 to 55 minutes.
  19. Insert a knife. If it is come out clean. Then cake is ready.
  20. Take out from oven.
  21. Let it cool. Slice and serve.
