Ingredients to make Rum and Fruit cake

  • 1/4cup sugar
  • 2tbsp brown sugar
  • 1/4cup molasses
  • 1/2cup butter
  • 1 egg
  • 1/2cup flour(maida)
  • 1/4tsp clove powder
  • 1/4tsp cinnamon powder
  • 1/4tsp all spice powder
  • 1/4-1/2cup rum
  • 1/8cup candied ginger
  • 1/8cup cranberries
  • 1/8cup blueberries
  • 1/8cup raisins
  • 1/4cup cherries
  • 1/4cup pecans and walnuts
  • 1/8cup dried fruits
  • 1tsp baking soda

How to make Rum and Fruit cake

  1. Mix all the dried fruits and pour the rum to soak the fruits.
  2. Line and grease the moulds. Preheat the oven to 180 degree C.
  3. For the cake , Whip together the butter and sugar until creamy. Add in the egg and continue to whip.
  4. To the mixture add in the molasses and the strained fruits.
  5. Finally add in the flour, Cinnamon powder, clove powder, baking soda and all spice powder. Fold in all dry ingredients into the wet.
  6. Pour the batter into prepared moulds and bake for 30-35 minutes
  7. Once a skewer comes out clean when pricked in the centre of the cake, it's baked.
  8. Pour a couple of table spoons of the fruit soaked rum liquid on the hot cake.
  9. Pour a couple table spoons of rum for extra flavour.
  10. Slice when cold
