Pineapple Zafrani Zarda

Ingredients to make Pineapple Zafrani Zarda

  • 500 gms Basmati rice
  • 500 gms sugar
  • 4-6 cardamoms
  • 1/2 teaspoon saffron strands
  • 1/2 tin pineapple pieces
  • 20 gms pistachios, slivered
  • 2 tbsp Desi ghee
  • 2 tbsp Milk
  • Orange food colour, optional
  • Cherry, optional

How to make Pineapple Zafrani Zarda

  1. Wash and soak the rice in a bowl for an hour
  2. In a large, thick bottomed vessel, add about a litre of water
  3. Crush the cardamoms and add to the water along with half of the saffron. Add a pinch of orange food color for a brighter Zarda
  4. Soak the remaining saffron in the milk.
  5. Bring the water to a boil
  6. Add the rice
  7. When the rice is almost cooked, remove from flame and drain the water.
  8. Remove two thirds of the rice, now put half of the sugar, pineapple tidbits and ghee in the remaining rice.
  9. Put the half of the removed rice back in the vessel, put the remaining sugar, pineapple and ghee.
  10. Cover with the remaining rice
  11. Sprinkle the saffron strands along with the milk
  12. Cover the vessel and let it sim on very low heat till the sugar dissolves,this takes about 10 to 15 minutes.
  13. Check for doneness, the rice should be cooked and the sugar dissolved
  14. Remove from flame and mix the rice lightly, till everything is well Incorporated.
  15. Garnish with pistachios, Pineapple tidbits and a cherry
  16. Serve warm
