Ingredients Serving: 4

  1. Long grain Basmati Rice - 2 cup
  2. Sugar - 300 gm
  3. Saffron - 1 tsp
  4. Milk - 1 tbsp
  5. Cashews - 1 tbsp
  6. Raisins - 1 tbsp
  7. Ghee - 1 tbsp
  8. Tutti frutti - 1 tbsp
  9. Khoya - 100 gm
  10. Water - 4 cups
  11. Green Cardamom - 2

Instructions

  1. Wash and drain Basmati rice.
  2. Heat ghee in a pressure cooker.
  3. Put green Cardamom in it.
  4. Put washed Basmati Rice in it and fry for 2 or 3 minutes.
  5. Add 3 and 1/2 cup water and close the lid.
  6. After 1 whistle switch off the flame.
  7. In another pan make Sugar syrup from 3/4 cup water and sugar.
  8. Soak Saffron in Milk.
  9. Add Saffron milk in sugar syrup.
  10. Fry Cashews and Raisins in ghee and keep aside.
  11. Open the lid of cooker.
  12. Add Fried Cashews, Raisins and khoya.
  13. Close the lid and keep cooker on flame.
  14. When it reaches full pressure switch off the flame.
  15. Open the lid and place Zarda in a plate or bowl.
  16. Garnish with Some Cashews and Tuti fruti.
  17. Enjoy Zarda.
