Ingredients Serving: 8

  1. For compote -
  2. Few strawberries diced
  3. 1/2 cup apple peeled and diced
  4. zest of 1 orange
  5. 2 tablespoons sugar
  6. 1/2 cup freshly squeezed orange juice
  7. ¼ teaspoon ground Cinnamon
  8. 300 GM's cranberry
  9. Ingredients for mix fruit cake-
  10. 3 Large eggs
  11. 2 cups Sugar
  12. 2 cups all purpose flour
  13. 3/4 cup unsalted butter, cubed and softened at room temperature for 1 hour
  14. 1 teaspoon vanilla essence
  15. 1 teaspoon orange extract, optional
  16. 1/2 cup canned mixed fruits (strain them and pat dry on kitchen towel)
  17. 1/2 teaspoon salt

Instructions

  1. For cranberry compote-
  2. Add the cranberries, strawberries ,orange zest, sugar, orange juice and the cinnamon into a medium-large pot, and set it over medium-high heat; stir the ingredients gently to incorporate the sugar and the spices together, and bring the cranberry/apple mixture to the boil.
  3. Once it comes to a boil, reduce the heat to low / medium-low, and allow the mixture to gently simmer, uncovered, until the cranberries begin to soften slightly, for about 7-8 minutes
  4. Turn off the heat, and pour the cranberry mixture into a clean bowl, and allow it to cool completely (the mixture will continue to thicken up due to the natural pectins in the fruit, as it cools)

  6. Method for mix fruit cake -
  7. Preheat the oven to 180 C. Lightly grease one 10-inch pan.
  8. beat the eggs and sugar until very smooth and creamy. Beat on high speed for 6 to 8 minutes. The egg and sugar mixture will double in volume and turn very pale yellow, leaving ribbons on top of the batter when you lift the beaters.
  9. Beat in the butter, vanilla, and orange extract, Beat for 2 minutes or until the butter is smoothly incorporated.
  10. Use a spatula to fold in the flour, salt, and cranberries and mix fruits.The batter will be quite thick. Spread gently into the prepared pan and bake for 35 to 40 min
  11. Cool for 20 minutes then run a knife around the inside edge of the pan and remove the cake. Cool for an hour before serving.
