Strawberry Lamingtons

Ingredients to make Strawberry Lamingtons

  • For the cake-
  • 1 1/2 cup flour
  • 1 cup granulated sugar
  • 1/2 cup malai
  • 1/2 cup Milk
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • For the sauce
  • 1/4 cup strawberry conserve
  • 1/2 cup strawberry dessert topping
  • 2 tbsp strawberry crush
  • 100 gm dessicated coconut( for coating)

How to make Strawberry Lamingtons

  1. For the cake, sift flour, baking powder and salt and keep aside.
  2. In a bowl mix sugar and malai well. Add eggs one by one and beat well.
  3. Add vanilla essence
  4. Add in the flour and milk alternately till all is incorporated.
  5. Put in a 8" greased pan and bake in a preheated oven at 180 degree C for 30 mins or till skewer comes out clean.
  6. Let it cool, then demould and cut into square pieces, 2" size.
  7. Mix all the ingredients of sauce and cook till thick, let cool and then coat the pieces with the sauce first and then desiccated coconut.
  8. Enjoy yummy lamingtons.
