Ingredients to make Vattayapam

  • Raw rice or Idli rice-1 cup
  • Cooked rice-1/2 cup
  • coconut-1/2 cup
  • sugar-6 tbsp.
  • salt- to taste
  • Instant yeast- 1/8th tsp
  • salt-1/4 tsp
  • Cashew and raisins for Garnish

How to make Vattayapam

  1. Soak the rice for 3 hours
  2. Grind together cooked Rice, Soaked Rice, Fresh Coconut, Salt, and Sugar. The consistency should be thick, thicker than Idli Batter
  3. Add instant yeast and mix. Leave to ferment for Three Hours.
  4. After three hours mix well.Grease a 9-inch cake tin with oil and pour the batter. Garnish with Cashew and Raisins
  5. Steam for 25 minutes and let cool. Invert on a plate and slice like cake.
  6. Eat as is for breakfast. Can be eaten with Veg Korma, Egg Curry, Chicken Curry.

My Tip:

Taste the batter after grinding. If you need it sweeter, add powdered sugar. If the batter becomes thin add some rice flour and ferment for 4 hours.
