ABOUT Pineapple Chocolate Sushi With Fruit Sauce RECIPE

Here is my take on sushi - My wildest attempt is to make a dessert sushi. I came up with a chocolate sushi filled with sweet rice and juicy Delmonte pineapple. Pineapple and cranberry sauce take this dessert to a different level..make this chocolate sushi, it's simply irresistible.

Ingredients Serving: 4

  1. 150 gm sushi rice
  2. 400 ml coconut milk
  3. 1 teaspoon vinegar
  4. 100 gm sugar
  5. 100 gm dark chocolate
  6. 2 tablespoon corn syrup
  7. 2 slices of pineapple ( chop it nicely)
  8. Ingredients for pineapple sauce -
  9. 1/4 cup pineapple juice
  10. 1/2 cup Sugar
  11. 1/2 cup water
  12. Yellow color (optional)
  13. For cranberry sauce
  14. 1/2 cup cranberry
  15. Few drops red color (optional )
  16. 1 Cup water
  17. 1/2 cup sugar

Instructions

  1. cut the pineapple into small pieces
  2. put the rice in a very heavy saucepan with the coconut milk, bring to the boil, then simmer very gently for 10 minutes, stirring frequently, until the rice has the consistency of a thick Risotto. Add sugar and vinegar, cover and leave to cool.
  3. Melt the chocolate. Draw 3 rectangles, each 24x7 10 cm, on 3 sheets of non-stick baking paper so that one long side is on the edge of the paper.
  4. Spoon the cooled rice on a 3 separate sheets of rectangle butter paper, pressing down very firmly with the back of a spoon. arrange a thin line of pineapple down the centre of each.
  5. carefully roll up the fruits and rice in the paper,squeezing the edges of the paper tightly together so that the rice is tightly packed.roll up the rice in the chocolate ( Chocolate edges should just meet) chill for two hours then remove the paper. Serve with pineapple and cranberry sauces
  6. For cranberry sauce
  7. Boil cranberry in water. let the water reduce to half, add sugar. Cook for few more minutes. switch off the gas and let it cool for some time blend the mixture and pass through the strainer
  8. For pineapple sauce -
  9. Cook Pineapple in water and juice. .let the water reduce to half add sugar. Cook for few more minutes. switch off the gas and let it cool for some time. churn the mixture in a blender. When it comes to room temperature pass through the stainer
