Fruity Muffins

Ingredients to make Fruity Muffins

  • apple 1
  • banana 2 - 3
  • Orange 1
  • Khoya/mawa or dried milk 1/3 cup
  • Wholewheat flour or atta 1/2 cup
  • All Purpose flour/Maida 1/2 cup
  • sugar 1/2 cup
  • Oil or butter 1/4 cup
  • Orange juice 1/2 cup
  • Orange zest 1/2 heaped teaspoon
  • Chocolate chip or dry fruits to sprinkle
  • cinnamon powder 1 teaspoon
  • Baking powder 1 teaspoon
  • baking soda 1/2 teaspoon

How to make Fruity Muffins

  1. Preheat the oven to 180 C for 10 minutes.
  2. Grease the muffin moulds.
  3. Peel and grate the apple.
  4. Heat a pan and add the grated apple and sugar.
  5. Cook on low flame and stir continuously.
  6. Cook till the sugar dissolve and the mixture becomes thick. Let the mixture cool down.
  7. Peel and chop the banana and blend or grind with khoya/mawa or dried milk.
  8. Sieve both flour, baking powder, soda and cinnamon powder.
  9. In a large bowl add apple and sugar mixture, oil or butter, orange zest and orange juice.
  10. Beat well and add dried milk and banana mixture.
  11. Mix and add dried ingredients gradually in it. Mix well.
  12. Fill the greased muffins moulds 3/4 with the batter.
  13. Sprinkle chocolate chips or dry fruits or any nuts of your choice.
  14. Bake in preheated oven at 180° for 20 minutes or until the toothpick comes out clean.

My Tip:

You can use only wholewheat flour/atta or all purpose flour/maida. Or mix half oats powder with the flour. And if you don't have moulds you can use cake tin too. Make like a cake, slice and serve.
