Ingredients to make Healthy Veggie Salad

  • 1/2 cup Broccoli chopped into small pieces
  • Violet cabbage 1/2 cup
  • carrots 1
  • Black beans 1/2 cup soaked and boiled
  • tomato 1 large
  • onions 1medium sized or leaks
  • cucumber 1
  • Red, green, yellow capsicums 1cup
  • 6 Black and green olives
  • 1pinch of salt
  • pepper
  • Flax seeds powder 2tbs
  • 1 pinch Orange zest
  • Oregano and basil herbs 1tbs
  • 1tbs garlic powder
  • 3 tbsp olive oil
  • 1tbsp Pudhina powder
  • 1cup curd

How to make Healthy Veggie Salad

  1. Marinate Broccoli, capsicums, carrot, purple cabbage and carrots in olive oil, lemon juice, salt and pepper
  2. Now add all the other ingredients like chopped cabbage, olives, tomatoes, onions, boiled black beans, cucumber. Mix well
  3. Dry roast marinated veggies. Roasted for about 10 minutes in crisp mode or else by roast in gas stove
  4. Mix roasted veggies with chopped veggies and some seasonings like pepper, red chilli flakes, olive oil oregano, garlic, basil, pudhina powders. Mix well.I also added 2tbs flax seed powder.
  5. In 1cup of whisked curd add orange zest garlic, red chilli flakes, salt,basil,oregano,pudhina powders. It will be yellowish because of zest and will have a great aroma. Add to the salad and Serve

My Tip:

Veggies are slightly roasted. To avoid that raw smell from veggies, roasting vegetables is a great option for healthy food especially for diet and to be in shape.curd should be thick and shouldn't mix with salad. if you don't have herbs like oregano and basil, replaced with pudhina, coriander powder. In salads,garlic powder gives more flavour. Adding Aloo bhujiya, mixtures will make the salad little crunchy and eatable.
