Khandvi is a gujrati delicacy and is a little tricky to make but with this easy recipe, you can make it at home and that too using a microwave oven/

Ingredients Serving: 4

  1. besan flour 1 cup
  2. Water 3 Cups
  3. Curd 2 table spoon
  4. Turmeric 1/8 teaspoon
  5. Asafodita 1/8 teaspoon
  6. Salt 1 tsp
  7. Chilli ginger paste 1/2 tsp
  8. For stuffing
  9. Green peas 100 gm
  10. Chilli ginger paste 1/8 tsp
  11. Salt
  12. sugar 1tsp
  13. Lemon juice 2 tsp
  14. For decoration
  15. Schezwan paste 1 tbs
  16. Chopped coriander 1tbs
  17. Coconut powder 1tbs
  18. Oil 1 tbs
  19. Sesame seeds 1 tbs
  20. Mustard seeds 1tsp
  21. Whole chilli 1

Instructions

  1. Mix besan flour, water, curd, chilli ,ginger paste, Salt turmeric and asafodita in microwave bowl and blend it well. There should not be any lumps.
  2. Microwave at high power for 10 minutes. Stir after every 2 minutes and scrap khandvi batter from the side of the bowl as it cools fast.
  3. When the batter cook in thick form spread on baking mat or plastic evenly
  4. Boil the fresh green peas in water for 2 minutes in microwave
  5. Remove the water and grind into a paste, using a mixer grinder.
  6. Put oil in a pan heat it add mustard seeds add above green peas paste. Add salt, sugar, lemon juice cook for 2 minutes.
  7. Apply Schezwan paste on khandvi.
  8. Then apply the peas paste on khandvi.
  9. Slice the khandvi and roll each slice to make cylindrical rolls. Chop the rolls into bite size pieces.
  10. For tadaka heat 1 tbs of oil add mustard seeds. When seeds crackle ,add sesame seeds and chopped chilli.
  11. Pour this tadaka on khandvi and decorate with chopped coriander and coconut powder.
