Ingredients Serving: 4

  1. Railway aloo curry :
  2. Boiled potatoes - 2
  3. Ghee - 1.5 tbsp
  4. Cumin - 1.5 tsp
  5. Turmeric powder - 1/3 rd tsp
  6. Coriander powder - 2 tsp
  7. Red Chilly powder - 1 tsp
  8. Coriander leaves
  9. Salt
  10. Satpura parathas :
  11. Wheat flour
  12. Water Ghee
  13. Kasuri Methi
  14. Salt

Instructions

  1. Railway aloo curry : 1. Dice the potatoes and keep aside.
  2. 2. Heat a pan with some ghee. Once hot, add cumin and let it splutter
  3. 3. Mix the powdered masalas in little water to make a paste add this paste intoo the pan.
  4. 4. Add salt and cook for few seconds.
  5. 5. Then add the diced boiled potatoes and toss.
  6. 6. Garnish with coriander leaves.
  7. Satpura parathas : 1. Mix salt , with the flour and mix water to form a soft dough.
  8. 2. Rest the dough for 15 minutes and roll out small rounds
  9. 3. Take each roti and smear ghee on it. Sprinkle Kasuri methi generously on top.
  10. 4.Cut them into equal width strips. Place the strips one by one on each other.
  11. 5. Fold to form a round, just like lachcha paratha.
  12. 6. Roll them and shallow fry.
