Easy Glazed Orange Cake

Ingredients to make Easy Glazed Orange Cake

  • For the cake
  • sugar 1 1/2 cups
  • flour 2 cups
  • Juice of two oranges(approximate 1/2 cup)
  • Vegetable oil 1/2 Cup
  • 4 eggs
  • Baking powder 4 tsp
  • baking soda 1/2 tsp
  • Orange zest 1 tbsp
  • Vanilla essence 1 tsp
  • For Glaze
  • 1/4 cup orange juice
  • 2 tsp sugar

How to make Easy Glazed Orange Cake

  1. In a big bowl beat sugar and eggs untill fluffy and pale.
  2. Add vanilla and mix well.
  3. In another bowl, sieve the flour, baking powder and baking soda together.
  4. Add 1/3 of the flour mixture in the egg mixture and mix well. Then add another 1/3 and mix well. When adding the last 1/3 part flour mixture, add orange juice and zest.
  5. After the ingredients are well mixed, transfer to a pre-greased baking mould.
  6. In a pre-heated oven, bake for 35 minutes and check whether the cake is ready by inserting a clean knife. If not, increase the time for 5 more minutes.
  7. For Glazing Mix the sugar and orange juice.
  8. Prick the cake with a fork on top. Pour the glaze on the top of the cake and at the same time quickly spread that with a butter knife or back of a spoon.
  9. Slice and enjoy!

My Tip:

1. If using an electric beater, beat the sugar and eggs with that but try to mix the flour mixture with hand otherwise the cake might become too dense. 2. You can thicken the glaze by heating on fire but that would destroy the Vitamin C. So just use the juice. 3. If you are using silicone mould, the baking time would increase, up to 15 minutes. Please keep checking.
