Ingredients Serving: 4

  1. Bell peppers (yellow, red and green) halves - 3
  2. butter as needed
  3. Boiled and chopped veggies (beans, carrots, peas, cauliflower and potatoes) - 1 cup
  4. Chopped garlic - 1 tsp
  5. oregano 1 tsp
  6. Crushed pepper as per taste
  7. chilly flakes as per taste
  8. Salt as per taste
  9. Grated cheese as needed
  10. Cheese slice quarters - 4
  11. Bread slices - 3

Instructions

  1. Clean the Bell peppers and cut them into quarters. Slightly saute them in a pan with butter. Keep them aside.
  2. In the left over butter in the pan, add chopped garlic. Once it smells, add the boiled veggies and salt.
  3. Cool them till they are half done. Remove from heat.
  4. Now take each bellpepper quarter and place a small slice of cheese in it.
  5. Put a spoonful of the vegetable mixture and top it with grated cheese.
  6. Take each bread slice and cut them into shapes of the sail of a boat.
  7. Apply butter on the sides and put a toothpick through. Place the toothpick on the vegetable boat.
  8. Bake them in preheated oven at 200 degree celcius for 20-25 minutes.
