ABOUT Golden Waffles RECIPE

An American classic that can be had any time of the day. Change the toppings to make it interesting for kids.

Ingredients Serving: 4

  1. Flour (Maida) – 1 cup
  2. Butter - 75g
  3. Dry Yeast - 1/2 tbsp
  4. Sugar - 1/2 tsp
  5. Milk - 125 ml
  6. Cream - 125 ml
  7. Eggs - 2 ( Separated )
  8. Salt - 1/4 tsp ( Omit if using salted butter )
  9. Banana - 4 ( Sliced for the topping )
  10. Honey / Maple Syrup - 5-6 tbsps
  11. Cheddar cheese - 3-4 tbsp ( Grated )
  12. Paprika - 2 tsp
  13. Oregano - 2 tsp

Instructions

  1. Take yeast in a bowl along with the sugar and add some warm milk and let it stand for a couple of minutes.
  2. Separate the egg whites and yolk. Place the egg whites in a dry bowl and cover.
  3. Sieve the flour and keep aside.
  4. Take butter in a bowl and melt it in the microwave. To this add the egg yolks and beat with a light hand.
  5. By this time the yeast-sugar-milk mixture should be bubbling. If not then either the yeast is dead or the milk was too cold and the yeast is not activated. Start fresh in either case.
  6. Add the yeast mixture, cream and part of the milk to the butter-yolk mixture and mix thoroughly.
  7. Sprinkle the flour little by little into this and keep mixing with a light hand.
  8. Add the rest of the milk and mix to get a smooth batter. If the batter looks too thick add some more milk.
  9. With an electric beater beat the egg whites to soft peaks.
  10. Gently fold the egg whites into the waffle batter.
  11. Keep it covered in a warm place for about 45 mins to an hour for the batter to rise.
  12. Preheat the waffle maker and ladle some of the batter on to the waffle plate. Gently spread it to cover the whole plate. Close and let it cook.
  13. I use a Russell and Hobbs sandwich maker that comes with a waffle plate. Wait for lamp to indicate that the waffle is done. Gently pick the waffle with a spatula and see if the underside has crisped up.
  14. I like my waffles to be just golden and crisp around the edges so I keep it in the waffle maker for a couple of more minutes.
  15. Serve hot with a variety of toppings.
  16. For those with a sweet tooth top it with banana slices, honey or Maple syrup. You can add a dollop of ice cream in summers.
  17. If you like it savoury, grate some cheddar cheese and sprinkle a dash of paprika and oregano.
