Lotus shaped rice flour dumplings ,stuffed with coconut filling and cooked in milk

Ingredients Serving: 4

  1. Rice flour - 1 cup
  2. Wheat flour- 2tbsp
  3. Salt - 1 pinch
  4. Hot water - 1 cup
  5. Milk - 1 litre
  6. Sugar - 1/2 cup
  7. Nolengur (dates jaggery) - 1/2 cup
  8. Elaichi powder - 1 tsp
  9. Stuffing :
  10. Grated coconut - 1 cup
  11. Nolengur (dates jagerry) - 1/2 cup

Instructions

  1. Mix rice flour, wheat flour and salt together and add the hot water. Cook this mixture while stirring it till it forms a hard dough.
  2. Meanwhile cook the grated coconut and dates jaggery to form a stuffing.
  3. Make small roundels of the rice four dough and stuff then with the coconut stuffing and give them a shape of the flower.
  4. Now boil the milk and reduce to 3/4th of its volume.
  5. Then add the flower shaped peethe/dumplings and carefully cook them.
  6. Once cooked add the sugar and cook till it reduces little more.
  7. Finally sprinkle the elaichi powder along with grated dates jaggery. Mix and serve
