I feel real bad wasting de green coriander stalks especially when it is a big bunch that you pluck leaves from. So make a yummy green chutney which is a must have for many a sandwich.

Ingredients Serving: 6

  1. Big bunch green coriander stalks about 3-4 handfuls
  2. A handful of coriander leaves
  3. 2 -3 handfuls of mint leaves
  4. 1/2 tbsp. Sugar
  5. 20 gms. Roasted peanuts
  6. Juice if half lemon (optional)
  7. 2-3 green chillies roughly chopped
  8. 1 inch peice of ginger chopped into small cubes
  9. 5-6 cloves of garlic roughly chopped
  10. Salt to taste

Instructions

  1. Pluck as much tender stalk as you can take. Wash, clean and roughly chop green coriander stalks, coriander leaves, mint leaves and put it in a seive to drain excess moisture.
  2. Dry roast de peanuts till crisp and dry. Remove skin and keep aside.
  3. In a mixie jar add peanuts, ginger, garlic, sugar, salt and roughly chopped green chillies, coriander stalks, coriander leaves and mint leaves.
  4. Pulse in the mixer to a fine paste. Water is generally not needed but if difficult to grind you may add one - two tbsps. water.
  5. Lastly add de lime juice and pulse for a few seconds.

Simple coriander chutney has a flavour of its own! very nice...what a lovely fresh green colour...
