Ingredients to make Aloo-bathua paratha.

  • For stuffing-Boiled and peeled potatoes 500 gm
  • Bathua leaves 500 gm
  • jeera 1/2 teaspoon
  • oil to shallow fry parathas
  • amchur powder 1/2 teaspoon
  • 2-3 green chillies
  • Garam masala 1/2 teaspoon.
  • For parathas-
  • wheat flour.

How to make Aloo-bathua paratha.

  1. combine the flour with water and make a dough cover it and let it rest for atleast 20 minutes.
  2. For stuffing: clean and wash the bathua leaves and boil it for 1 whistle in a pressure cooker. let it cool and grind it into a paste
  3. Heat a pan add 1 table spoon oil 4-add jeera and let it crackle. add bathua paste and saute it for 2-3 minutes on medium flame. add mashed potatoes and mix it with bathua paste.
  4. Add salt,garam masala powder ,amchur powder and green chillies . Mix it well cook it untill all the water of bathua evaporate. switch off the flame.
  5. Roll the dough and place 1 table spoon stuffing pack it and roll it into a paratha. 11-pour oil and shallow fry from both the sides. Serve hot with green chutney.

My Tip:

The stuffing should be dry enough otherwise it will come out.
