Ingredients Serving: 4

  1. FOR PARATHA :
  2. 2 cups whole wheat flour
  3. 1/2 tablespoon oil
  4. 1/2 teaspoon salt
  5. Warm water 1/2 cup
  6. FOR THE PEAS STUFFING :
  7. 2 cups peas boiled
  8. 1 fresh red/ green chilli
  9. 1/2 teaspoon whole cumin seeds
  10. 1/2 salt
  11. 1/2 teaspoon chat masala
  12. 1 teaspoon Lemon juice
  13. 1 teaspoon refined oil for peas
  14. 1/2 cup refined oil for the paratha
  15. FOR ALOO SABJI :
  16. 2 large potatoes
  17. 1 medium size tomato chopped
  18. 1 large onion sliced
  19. 3/4 big pods of garlic chopped
  20. 1/2 teaspoon ginger chopped
  21. 1 red chilli chopped
  22. 1/2 teaspoon kalonji
  23. 1/2 teaspoon whole cumin seeds
  24. 1 teaspoon salt
  25. 1/2 teaspoon turmeric
  26. 1/2 teaspoon garam masala
  27. 1/2 teaspoon jeera powder
  28. 1/2 teaspoon amchur powder
  29. 1 Cup water

Instructions

  1. FOR THE PARATHA :
  2. Mix all the ingredients mentioned in the column for paratha and make a soft dough out of it.
  3. Let it rest for about 15 mins
  4. FOR THE PEAS STUFFING :
  5. Boil the peas or you can use frozen ones if you have .Frozen peas doesnt needs to be boiled just thaw them before using.
  6. Now grind your peas with the chilli into a coarse paste .
  7. In a pan heat oil and let the cumin seeds splutter for a min or so. After that put the pea paste and fry them in a low heat for about 10 mins, add lemon juice , chat masala and salt and mix well. Keep it aside.
  8. FOR ASSEMBLING THE PARATHA :
  9. Roll out a ball from the dough and flatten it with your hands. Put about a spoon of the peas masala in it and gently cover it and seal the edges nicely.
  10. Now with a rolling pin roll out your parathas as you do with your chapattis / rotis but a bit gently or else the masala might get out.
  11. Now heat a tawa and put your paratha in it. Let it heat on one side then flip on the other and put oil in it . Press it gently then flip back and use some more oil . It will be light brown on both sides. Press the sides gently. It will done within 5 - 6 mins on a medium to high heat.
  12. FOR ALOO SABJI:
  13. Boil the potatoes in a deep vessel with about 2 cups water and salt. When the potatoes are done , cool them then peel the skin off and chop them into small cubes.
  14. In a pan heat oil and throw the cumin seeds and kalonji together. Fry for a second then put in the sliced onions , ginger ,garlic and chilli.
  15. Add the potatoes, salt and turmeric fry for sometime then add in the tomatoes. Fry for another 2/3 mins then add the garama masala, amchur powder, jeera powder. .
  16. Now fry everything together in a high heat for about 2/3 mins then add water. Let it boil for about 7/9 mins and stir in between so that it doesn't stick. The gravy will become thick at this point . You can check your salt ,spice and tanginess in this sabji.
  17. Now serve it with the parathas and a spicy chutney and some hot tea with it. It's heaven. Hope u all enjoy.
