Gil- Ae - Firdauz

Ingredients to make Gil- Ae - Firdauz

  • Lauki (bottle gourd). - 250gm
  • rice (soaked) - 5tbsp
  • Milk - 5 cups
  • sugar - 8- 9 tbsp (adjust as per sweetness req.)
  • Khoya - 1 cup
  • ghee - 2tbsp
  • Dry fruits (almond,pista,raisins) - 1/4th cup

How to make Gil- Ae - Firdauz

  1. Grate the lauki and strain to remove all water.Keep aside.
  2. Soak rice for 30 mins .Strain and grind to a coarse semolina like consistency
  3. In a pan add ghee and the grated lauki and saute for 5- 10 mins.Now add milk and let it boil.
  4. Now add the rice and mix well.Cook on slow flame till the rice gets cooked and you get a nice aroma.
  5. Finally add sugar,khoya.Mix well.Add the dry fruits .You can eat it hot or serve chilled .

My Tip:

Once you add the ground rice you need to stir continuously as unlike whole rice kheer,the ground rice tends to stick.
