Ingredients to make Healthy veggie pulao

  • Purple and green cabbage 1/2 cup total
  • Red, yellow, green capsicum 1/2 cup total
  • green chillies 1-2
  • onion 1 medium sized
  • Beans 3-4
  • Soybean soaked(optional) 5-6 beans
  • red kidney beans soaked and boiled and moong sprouts(optional) 1/2 cup total
  • Frozen green peas soaked in water -1/2 cup
  • rice- 1 cup steamed cooked
  • olive oil 1 tablespoon
  • Grated carrot -1/2 carrot
  • Tofu(optional)- 8-10 small cut cubes
  • red chilli powder-1/2 teaspoon
  • cumin powder 1/2 teaspoon
  • salt to taste
  • Garam masala 1/2 teaspoon
  • coriander powder 1/2 teaspoon
  • turmeric powder 1/2 teaspoon

How to make Healthy veggie pulao

  1. Steam cook the rice and cool them.
  2. Chop all the veggies.
  3. Take olive oil in pan heat add mustard seeds to crackle. Add cumin seeds.
  4. Saute green chillies and onion
  5. Add turmeric powder and stir
  6. Add veggies one by one. Add beans, cabbage, carrot and cook for 5 mins covered on low flame
  7. Add soyabean. Cook for 5 mins on low flame covered.
  8. Add capsicums, green peas, cook for another 2 mins
  9. Add red kidney beans, sprouts, tofu cubes and red chilli powder, cumin powder, garam masala, coriander powder, salt
  10. Give it a nice stir and cook for another 2-3 mins.
  11. Add lemon juice 1-2 teaspoon , stir and serve hot.
  12. Add cooked rice and stir well

My Tip:

You can add more or less veggies according to taste. More colored veggies give more nutrition. You can use brown rice too for extra nutrition.
