Ingredients Serving: 4

  1. 1 1/2 cup maida
  2. 1/2 cup curd
  3. 2 tablespoons ghee
  4. 1 tablespoon atta
  5. 1/2 teaspoon salt
  6. For the filling
  7. 3/4 cup moong dal soaked and coarsely ground
  8. 1 BUNCH CORIANDER LEAVES CHOPPED
  9. 1/4 cup mint leaves chopped
  10. 2 tablespoons lemon juice
  11. 5 green chillies chopped finely
  12. 1/2 teaspoon haldi powder
  13. 1 teaspoon garam masala powder
  14. 1/2 teaspoon hing powder
  15. 1/2 teaspoon jeera
  16. Salt to taste
  17. Oil for frying

Instructions

  1. Make a stiff dough with the Maida , atta , salt , curd , ghee and water.
  2. Cover with damp cloth and leave aside.
  3. Heat 2 tablespoons of oil in a kadhai. Add the jeera for tempering. Add the hing.
  4. Add the coarsely ground moong dal and mix well.
  5. Add haldi, salt , sugar, green chillies , coriander leaves and mint leaves.
  6. Saute for two minutes.
  7. Add the garam masala and lime juice. Mix well.
  8. Remove from fire when moong dal is cooked and dry.
  9. Make small balls from the Maida dough. Roll small rounds and fill with the prepared mixture. Seal well to make kachoris.
  10. Deep fry in medium hot oil till crisp , fluffy and golden.
  11. Drain on absorbent kitchen towel and serve hot with chutney of your choice.
