Ingredients to make Date Slice

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 75 grams butter at room temperature
  • 1 egg
  • 3 tablespoons warm milk
  • 2 teaspoons honey
  • 1 tablespoon fine sugar
  • 1 1/2 cups dates
  • 1/2 cup fresh orange juice
  • zest of an orange

How to make Date Slice

  1. Whisk together flour, baking powder and salt in a bowl.
  2. Cut butter into cubes and add to the flour mix. Rub in butter until mixture is crumbly.
  3. In another bowl, beat egg. Add milk and honey. Stir.
  4. Add wet ingredients to dry ingredients. Knead a firm dough. Wrap in a cling film and refrigerate for 20 minutes.
  5. In the meantime, make date filling. Wash the dates, remove seeds and chop into small pieces.
  6. Transfer chopped dates to a thick bottom steel wok. Add orange juice. Cook on low heat. The dates will begin to soften. Mash with a ladle and cook until thick and smooth. Leave to cool. Add zest.
  7. Preheat oven to 180 degrees C. Line one 8x8 inch square cake pan with parchment paper extending over the sides.
  8. Divide dough into half. Roll one half large enough to cover the base of the pan. Spread date filling. Roll remaining dough to cover the filling. Brush with milk and sprinkle sugar.
  9. Bake for 20 minutes.
  10. Remove from the pan. Remove parchment sheet. Leave to cool on the wire rack.
  11. Slice when cold.
