Ingredients to make Gulab jamun

  • For jamuns - Evaporated milk(Khoya) 100gms
  • cottage cheese(Paneer )50 gms
  • all purpose flour 1 1/2 tbsp
  • Fine semolina 1 tbsp
  • Milk 1 tbsp
  • cardamom powder 1 tsp
  • Baking powder 1/4 tsp
  • oil for Deep frying
  • For sugar syrup
  • sugar 125 gms
  • water 1/2 cup
  • cardamom 4-5 pods
  • Rose water 1 tbso

How to make Gulab jamun

  1. Take khoya and mash it well so that no lumps are there.
  2. Add paneer, all purpose flour, semolina, baking powder, cardamom powder and mix well
  3. Add milk and bring the dough together to a sticky mass.don't knead.just mic softly.
  4. Cover the dough under a wet cloth and let it rest for 20 mins
  5. In the meantime prepare sugar syrup
  6. In a wide mouth vessel dissolve sugar and water and heat it on slow flame.
  7. When this syrup is cooking heat oil in another pan
  8. Make small balls of the dough and deep fry in low heat.(never fry the jamuns in high heat as they will turn brown quickly while the inside will remain uncooked)
  9. When the jamuns are done drain them on a kitchen paper napkin to soak excess oil.
  10. Just before the syrup reaches 1 string consisteny switch off the flame and add rose water.
  11. When the jamuns are still hot drop them in the sugar solution.
  12. When all the jamuns are dropped in the sugar syrup heat the syrup with jamuns on low flame for few minutes.
  13. Serve.
