Whole baigan are cooked in a spicy gravy - Just awesome!

Ingredients Serving: 4

  1. Small baigan 250 gm
  2. Chopped Onion 250 gm + 1
  3. Ginger garlic paste 2 tabspoon
  4. Tomato 2 large
  5. Coriander powder 2 tabspoon
  6. Red chilli 1 tabspoon
  7. Turmeric 1/2 tspoon (+ 1/2 tspoon for soaking)
  8. salt as per taste
  9. Mustard oil
  10. Methi dana 6 to 8
  11. Jeera 1 tspoon
  12. Chopped coriander 1 tabspoon

Instructions

  1. Slit baigan into 4 parts attached with head. Put these in a pan soaked in salt turmeric( 1/2 tspoon each) water.
  2. Grind 1 onion ,ginger garlic paste,tomato, red chilly powder,turmeric powder and coriander powder together in mixer.
  3. Heat mustard oil in a pan. Shallow fry chopped onion.
  4. Take out the fried onion from pan.Add more oil to it and heat the oil. Add methi dana and jeera , let them splutter. Add grind masala and salt.Add some water.
  5. Now cook the masala till oil separates.Add fried onion and cook further for 2-3 minutes.
  6. Now switch off the flame..Add soaked baigan to the pan one by one .with the help of spatula try to fill masala in slits of baigan.
  7. Now Add one cup of water to it. Pressure cook for 2 whistle. After removing steam garnish with chopped coriander.
