Ingredients to make Stuffed masala baingan

  • Baby brinjals - 12
  • Finely chopped onion - 2
  • Finely chopped tomatoes - 2
  • red chilli powder - 1/2 tbsp
  • turmeric powder - 1 tsp
  • Roasted peanut powder - 2 tbsp
  • Garam masala - 1 tsp
  • coriander powder - 1 tsp
  • salt to taste
  • oil
  • cumin Seeds - 1 Tsp

How to make Stuffed masala baingan

  1. Wash and soak brinjals in salt water. Rinse and slit them keeping the stem intact. Keep aside.
  2. For stuffing masala :Take a mixing bowl. Add all the ingredients except oil and jeera. Mix well.
  3. Fill the slit brinjals with this stuffing and keep aside.
  4. Heat a Kadai. Add oil and jeera. Once jeera crackles, add stuffed brinjals one by one. Add the remaining stuffing masala too.
  5. Simmer on a low flame till done.
  6. Donot add water at any stage as the water from onion and tomato is sufficient to cook the brinjals.
  7. Serve hot as an accompaniment with rice.
