ABOUT Sweet Puris (Pakatlya Purya) RECIPE

I have learnt this traditional recipe from my Mother.Those puris are soaked in sugar syrup.

Ingredients Serving: 5

  1. Maida 1 cup
  2. Semolina 1/2 Cup (Fine Quality)
  3. Yogurt 1 Tablespoon
  4. Oil 1 tablespoon
  5. Pinch of salt
  6. saffron strands
  7. Sugar 1 and 1/2 Cup
  8. Water 1/2 cup
  9. Oil or ghee for frying
  10. Cardamom powder 1/2 tsp

Instructions

  1. Mix Maida and Simolina with pinch of salt.
  2. Add 1 Tablespoon hot oil in it and then add yogurt in it. Knead to a stiff dough and let it rest for approximately 1 hour.
  3. For making sugar syrup, boil sugar and water together to make a two string consistency.
  4. Add cardamom powder and saffron strands in the syrup.
  5. Divide the dough into equal size balls. The size of ball depends on how big you want the Puris. Roll each ball to a medium circle.
  6. Heat the oil or ghee and deep fry the puris in it.
  7. Now immerse the puris in the sugar syrup.
  8. Put only 4 to 5 puris at a time.
  9. Soak them in the syrup for 4/5 minutes and then remove and keep it in a plate.
  10. Garnish with small pieces of pistachios and saffron strands.
