Bread pudding with Rabri

Ingredients Serving: 4

  1. Full cream milk 1 1/2 litres
  2. Fennel 1 tbsp
  3. Sugar 400 g
  4. 1 pinch of saffron
  5. Khoya 150 g
  6. Green cardamom powder 2 tsp
  7. Kewra water 2 tsp
  8. Rose water 2 tsp
  9. Thick slices of milk bread 8
  10. Oil to fry bread
  11. 4 tablespoon pistachio and almonds

Instructions

  1. Heat the milk in a heavy bottomed pan , add fennel, sugar , saffron , khoya , cardamom powder, kewra and rose water. Bring to boil and reduce till it thickens .
  2. Trim the sides of the bread. Fry it in oil until crisp.Keep aside
  3. Place the bread on a plate and pour the Rabri over it . Let it remain for some time till the milk is absorbed by the bread.
  4. Garnish it with pistachios and almonds.
  5. Serve
