Coconut Kova Barfi

Ingredients to make Coconut Kova Barfi

  • coconut grated - 1 cup.
  • sugar – 2/3 cup.
  • Cardamon / elaichi – 2 nos.
  • cashews , Almond and Pista – 4 tsp ( chopped for garnishing).
  • water – 1/3 cup.
  • Unsweetened kova – 3 tablespoon ( optional)

How to make Coconut Kova Barfi

  1. In 3 ltrs pressure cooker add sugar, water , peeled cardamon and heat in high flame for 6 whistles.
  2. Immediately release the pressure and open the cooker , add grated coconut and mix well.
  3. If the mixture looks too watery cook in open pot for few more mins until the mixture forms a ball consistency.
  4. When the mixture starts thickening add koya and keep mixing.
  5. When reached thick ball consistency remove from flame and spread it in a greased plate.
  6. Garnish with chopped nuts and press slightly so that the nuts will stick to burfi.
  7. Let the burfi remain undisturbed for 30 mins or till it reaches room temperature.
  8. Cut it with knife and enjoy the soft , chewy burfis.

My Tip:

If you are cooking in open pan, boil sugar syrup until one string consistency and immediately add coconut. Add only the white part of coconut don't add brown part. Khoya is optional so you can even skip it. Adding khoya gives a nice texture and a fantastic aroma.
