This is our heirloom recipe. It is a delicious kheer liked by all. We make this kheer on special occasions of Shraddh or Tarpan . This is a famous and traditional sweet from Gujarat. Made from Milk, sugar, nuts spices and a little rice. It is best enjoyed with pooris

Ingredients Serving: 6

  1. Full fat milk 3 litre
  2. Sugar 400 gms (adjust to taste)
  3. Ghee 1 tbsp
  4. Cardamom powder 2 tsp
  5. Nutmeg powder 2 tsp
  6. Basmati rice 2 tbsp ( washed and soaked )
  7. Pistachio 25-30
  8. Almond 25-30 ( soaked in warm water)
  9. Chirongi 2 tsp
  10. Saffron strands 8-10

Instructions

  1. Remove the skin of almond and chop almonds and pistachio.
  2. Take 2 tbsp lukewarm milk, add saffron strands and leave aside.
  3. Wash and soak the rice into water and keep aside.
  4. Start cooking :
  5. Take a heavy bottom deep vessel and apply ghee to the vessel. It helps the milk from burning.
  6. Add milk into the vessel and keep boiling on flame.
  7. Keep stirring continuously for about 30 minutes
  8. Now add sugar and soaked rice keep stirring for 20 minutes more.
  9. When it reduces to half add saffron, milk and chopped almonds, pistachio and chirongi.
  10. Keep boiling for next 5-6 minutes.
  11. Now your milk kheer is ready
  12. Now add cardamom and nutmeg powder and mix well.
  13. Let it come to room temperature
  14. Serve chilled.
